I wish I could cook.
I just don't have the patience to consistently cook great food.
I did try this, and it's so easy, even I could do it.
Spread foccaccia bread with pesto, then top with tomatoes, fresh mozzarella and fresh basil. Bake at 400 for 8-10 minutes, till the cheese melts.
I handmade the bread but bought the pesto. My family loved it. And I'm doing it again this weekend! Only things I'd change would be these: Use block mozz instead of fresh--the fresh isn't salty enough for my taste. And I didn't have enough full-size tomatoes, so I topped with a few grape tomatoes. Not as good.
Tell me what you think.
And if you have any other easy ideas for a patience-challenged cook, let me know.

ReplyDeleteyum!! this has been our favorite too!! my husband got a pizza stone for his birthday so instead of heating up the kitchen this summer he has been making pizzas on the grill...love when i get get him to do any of the cooking....and he loves his grill!!! I have a great pesto recipe on my sidebar....super easy...i make batches all summer and freeze. now i'm hungry for pesto pizza!!!

That looks so yummy! We make home made pizza every friday, except summer- too hot!
ReplyDeleteAn easy one to try is gnocchi- cook it up maybe even throw in some pasta while boiling, or saute a zucchini and add it after it's drained. It's good with red sauce or white sauce, and some grated parmesan cheese.
Another easy one is fish tacos- let me know if you want the recipe

ReplyDeleteThat looks sooo good! All the meals I make have to be quick because my hub usually comes home, needs to eat quickly and get back to the library. I'll have to think of what I usually make and let you know-I can't seem to think of anything at the moment, LOL.
